| I live on the HK side.  Still, my son used to have his 'brunch' (in fact, a full meal of rice, vegetables & meat) at around 10am, then a light snack at 4.00pm after school.   Dinner was with the family at around 7.30pm.   It worked out quite well and you'll be surprised how easily the child adapts to new schedules. 
 However, vincinity is a concern which you must give serious consideration because of its long-term impact.   From PY2 onwards, school starts at 8.10am.   Some children from Kowloon have to catch the bus as early as 6.30/6.45am! ... It pays to talk with Kwoon Chung to get an idea about the Kowloon & HK (your desired district) pickup/drop-off schedules.   Bearin mind certain areas in HK has to cope with super-early pickups too, so it may not be worthwhile for you to move across the harbour afterall.
