I totally concur with you as long as schwa is concerned. However, most linguists would consider schwa to be more related to phonetics rather than phonics. Having said that, in the bring-up of my kid, I would try to avoid the HK accent which meant I would produce the schwa, where appropriate, even when teaching my kid using phonics to read.
Phonics should NOT be taught alone. If possible, you have to make available a language-conducive environment for your child - to listen to the language (while avoiding the HK accent) and read with him/her (learning by sight). Taking the example of "temperature" that the other parent raised, I wonder if her child could pronounce it correctly at first sight, it was probably not just because of her child's phonics skill but the child's previous exposure to the word (e.g. the child should have heard his mum say the word, or even seen it through extensive reading).
