Most of your questions are covered in other CAIS threads in EK, so like Donnalyk said, you should spend some time to look at the other posts here.
To answer a few of your questions that aren't easily found elsewhere:

- AP is basically a university level course that can be credited at an accepting university, applicable to USA and Canadian universities.
- Path to Hong Kong universities would be through the non-JUPAS route, basically competing in the stream of foreigners, and not the locals who take the DSE and go through the JUPAS route.
- Language of the playground is English.  Rule is in place, but from what I hear it seldom needs to be enforced because the kids default to English.
- Chinese level is good for an International School.  If you want the level of local schools (and the craziness that goes with it), in my opinion, most international schools aren't for you.  If you set your expectations right, then it should be OK, because like life, you can't have it all...  :)
