The choice of subjects come when you start to embark on the 2 year IB diploma programme which ultimately takes you to the public exam. There are strictly speaking 3 stages in IB: PYP (primary), MYP (middle school) and IB diploma.
You don't need to take PYP and MYP to take IB diploma. But since IB diploma involves a couple of long essays (ToK and a 4000 words extended essay) and therefore schools tend to prepare the students the necessary skills well ahead in primary or middle school.
Some international schools or non IS IB schools like CKY in HK offer Igcse in year 10 and 11 followed by IB diploma in year 12 and 13, while some offer IB all the way up from PYP (primary) and some only from MYP
Alternatively there is an IS which only offers IB diploma called Li Po Chun United world college.
In IB diploma you need to choose 6 subjects. IB emphasises holistic development of a person and therefore the 6 subjects must involve languages (usually English and one more language), maths, science and humanities, plus optional subjects within creative art.
And then you have to choose standard level and higher level. Some schools encourage students to take 3 high 3 standard.
