mesmerising  We say, this is garlic, we have some garlic, but not this is a garlic.
mesmerising  Garlic 係uncountable,嚴格只可說a clove of garlic,not a garlic.

如果個名詞/食物可以在前面加indefinite article例如a同an(an apple,a pineapple), 那就是countable. 如果樣食物不能"直接"加a,an在前面(例如沒有a water,只有a cup of water),那就是uncountable了。

How did you learn English?  Don't get me wrong, I am not judging your English, just want to know if you went to local school and the traditional way of learning English or not.

mesmerising  Just checked up an American dictionary, it labels lettuce as variable as well, so it is not a British/ American difference, but rather depends on the circumstances.
mesmerising  Thank you. I think they missed out a group of nouns called variable nouns. I agree with the guy who said lettuces can be counted before shred and serve but usually use as uncountables on the table.

Dear shadeslayer,
Despite your usual sharp tongue, I felt this as a benign question, if not a flattering one. : ). To answer your question, YES, I went to a local convent school since P1 up to upper form and then received my senior high and tertiary in North America, doing fine arts and psychology as my double majors.  Those were the best years of my English. After that, I came back to Hong Kong and started my postgrad with the medical school where I used my English in just an intellectual way. I then got married straight away and have since lived my life as a mundane housewife, communicating mainly in Cantonese. I admit this has dulled my English to quite a degree over all these years.  Language needs immersion.  So, how about you? What brings you to the English you have now?

What a combination of subjects: Arts, psychology and medicine.

I knew you spent senior years in an IS in HK or abroad because the way you told others to judge whether a noun is countable or uncountable by looking at the article preceding it. Majority of locals do not do that.

Me?  I spent a number of years in the UK but it was long time ago.

No, those were taught by my local school in my primary years.  How do others mostly tell the differences between countable and uncountable?
It is not fair! I told you in details about my path to English (both ups and downs)and you just leave me  with"a few years in the UK".  : (

At least you should tell me what you did with your undergrad, maybe?  Hopefully?

一隻隻原隻活雞鴨係countable nouns(鴨其實係variable noun,女鴨才是countable, 但暫時可不理)。妳試試填there is _chicken in the field. 因妳會話there is a chicken in the field,所以chicken係countable.於是,我們又可話there are two chickens/ducks in the field.
就算一碟有好多塊,我們都只說some pieces of chicken,a pound of chicken等等。 例:a plate of chicken salad, two plates of chicken salad.

但現今有人口語說may I have two chicken salads please?
