Strictly speaking, pizza is an uncountable noun. So you don't normally say 2 pizzas. Instead you use a unit of measurement to represent. For example, two slices of pizza.
However, it is not uncommon to request two waters from a waitress in a restaurant nowadays. Instead of saying 2 glasses of water, it will sound more 地道. (Though not grammatically correct.)
BTW, apple is a countable noun. Otherwise, how can we say "an apple a day keeps the doctor away"?
