I am not an IB expert. But here are some answers to your questions of why more schools offer IB:
IB approach helps students to transit more smoothly to university education. In the universities, students are often asked to submit essays and homework which require them to do research on the topic, write something to communicate to the readers and add their own opinion in the essays. There is never any model answer.
The traditional education system is knowledge-based. Examinations test how much the students know. IB emphasizes critical thinking, creativity, the process of learning (so that students can apply similar approach throughout their lives in new topics and concepts). In my opinion this approach is more suitable for the modern world. Knowledge (or facts) can easily be retrieved from internet. The process of getting what you need, and screen out the useful stuff, critically analyse those materials presented by different people, is more important.
