I am a graduate of St. Rose of Lima's College. Even though I didn't study at St. Rose of Lima's School (Primary section), the school's secondary and primary sections used to share the same campus and many of my old classmates were from the primary section too, so perhaps, I could offer you some advice.
I can tell you that both Holy Family and St. Rose are very good schools. From what I saw, the style of teaching at St. Rose primary was very traditional, meaning that students were expected to be good, well disciplined, well behaved, keep quiet etc. (and a laundary list of what so called being "good girl"). The school offers a moderate number of extra-curricular activities, but don't expect it to be as wide range as other newer schools, or schools with a Protestant background. The school's English standard is pretty decent, which mainly is a result of the family background of the students whilst most of them are from middle class families.
I had great memories of my high school, but as a "freedom seeker", the school is just too strict and conservative for me. But I dare to say that all catholic girl schools in HK are very traditional and conservative (including St. Rose and Holy Family), so it depends on what type of education you want your duaghter to receive.
