Exactly same as your experience while I took Sara to the US, she was keep screaming and crying seriously with siting in the car seat. 我個心痛鬼死啊，
But while only my husband and Sara together, Sara behaviour very good, sometimes even can get on the car seat by herself.  
我係到個女就唔聽話、又紐計，係唔係個個小明友種意蝦阿媽

You are wrong!唔係個個小明友都種意蝦阿媽,通常阿爸阿媽是但揀1個黎蝦,不過我同你唔好彩,偏偏當選.

Daniel didn't scream too badly in Australia because we started to train him when he was 6 months old.  We took him to Australia when he was 18 months.  It really took us ONE WHOLE YEAR!  Actually, we kept him in a baby capsule ever since he was 5 days old (the day he was discharged from hospital).  We had NEVER NEVER held him in our arms whenever we travel in  a car and yet, he still loved to scream and made us nervous.  我仲想問,係唔係daddy drive時你都坐back seat陪佢?我同老公唔會架喎,no matter邊個drive,都要佢自己坐後面,慢慢(really can be 好慢, as I said - over 1 year!)佢會明白that is the rule and there is no other way out.  I always tell him, whenever the car is moving, he can only stay in his car seat.  If he wants to sit in the front, he can only do so when the car is parked in our own carpark.  Up to now, he still doesn't like it but we should be very firm on this.  我知呀,當佢scream果時,真係超級難頂,心痛,但當你諗深一層,佢無危險,無痛楚,只係唔like,唔happy,扭計...請你stay calm,專心drive,唔係就真係好危險.

I also want to let Sara try to take 羊奶片.
Sara.....I don't know why she like Ms Liu so much, she stick on Ms Liu, Ms Liu told me that if she just leave her for a miniute, Sara will cry immediately.  So even Ms Liu goes to toilet will take Sara together, and now Sara already become a little helper for Ms Liu in the class.

A funny thing, Ms Liu told me that when Sara cry, some others kids will pass a tissue to her and tell her not to cry.  next time I will ask Ms Liu who it is and say thank you to them la....

Oh bignose, you wanna let ansel to learn France or Spanish,  I am considering to let Sara to learn Japanese and France. But I am afraid she will get confused in learning different language, any commend.

Yes you are right, when daddy is driving I will sit next to her at the back seat, Owwww, I need to adjust it, follow your way, I will train her get sit by herself...

I don't think they'll get confused when learning 2-3 languages as age 0-6 is the most critical stage for them to pick up as much as they can.  
I like French better but my hubby likes Spanish instead.
As for Japanese, you may check with 心心 as she is also looking for Japanese class for Naoki.

Regarding using the car seat, Ansel gets used to it when he was about 6-month old.  He has no problem at all.  Yet recently he requested to sit by himself (with the seat belt on).  I let him do that when I can accompany next to him.

Actually I know nothing about French, just I wanna let her learn different languages when she is young, and see how much she can handle. So bignose, do you have any good French class can suggest us, hei...let them join together if possible.

我知道Happy Valley有一個language centre叫U-kids有得學Spanish, French, German, Japanese etc.,不過唔知好唔好,我淨係嚮Parents' Journal見過佢地advertise,記低左個電話,其餘mud都唔知.

我暫時無打算俾Daniel學呢D language住,會唔會cause confusion就見人見智,我傾向Sara-mama既做法,遲D先俾Daniel pick up another language.我12歲都讀左1年French,不過一直無機會用,已經95%俾番先生,而家唯一用到French都係買酒飲記French wine個名果時會醒D囉,所以學language真係要浸,我驚得2歲人仔就學,俾學費都俾到我窮.我打算around 8歲先俾佢正正經經去Alliance Francais學,又或者如果好彩陳守仁呢類學校收佢,就no need to pay extra money for French classes啦.

你就好啦,Daniel由出院5日大就用car seat,根本從未手抱過佢,唔知點解佢o甘反叛,not only car seat,stroller先慘呀,人推BB車好地地,我推BB車由6months推到11months先無發狂大叫尖叫,人地以為我kidnap佢呀!無計啦,鬼叫佢天生不羈放縱愛自由,卓號任我行.

我覺得學language應越早越好, 唔會cause confusion. 其實我在家都有比軒軒睇french story book, video, 同聽french兒歌, 但好多時佢會比其他野吸引左注意力, 所以想比佢join french pg.
Makus都係由BB開始用car seat, so far都ok肯坐, 但一定耍我坐隔離陪佢, 我都要狠心D train佢自己一個坐.
