My experience is if you want to have a sim card for use as soon as you land, better buy it from the vending machine in the airport, or get ready a sim card (with value in it) by ordering it beforehand in uk (if u have an address in uk) (or try to buy it from internet vendors in HK).
I have once not been able to find the vending machines, and tried to go to some telecom shops in the airport to get a sim card (with a package), and the price they quoted me was really expensive. Then i went to a sundry shop in the airport and bought a blank vodafone sim card and also top up voucher. However the value that i have topped up for drain away very fast, and i later realised that if i am not buying a monthly package on internet, then my top up is deducted by vodafone on daily charge which is expensive (2 pounds per day for internet usage).
If i remember correctly, the vending machines in the airport sell "3" sim card for around 20 pounds and can be used for a month. Trying to get the sim card from other means in the airport may not be very economical.
