Yes! Testing students' knowledge of sentence structure/grammar is indeed my favourate part of giving out unseen dictation.
There's no reason to give the "s" or "ed" sounds in a ridiculously loud voice. If the students know grammar well enough, they should be able to apply what they learn on the dictation.
Your example, "eat" and "it," is also a good one.
A student of mine once asked if it's "van" (pretending he was driving" or "fan" (pointing at the fan at home). At the end, he decided it himself by looking at the whole sentence. He's also in P1.
