In my opinion, whether IB or Alberta won't give a distinct advantage for transferring to Canada later. Slight advantage for Alberta curriculum as there'll be some specific Canadian content. Slight advantage if you graduate from CAIS and planning to go directly into a Canadian university, as credentials would be recognized as being from Canada.
Choice of traditional or simplified Chinese at this point for those entering at the lower grades.
I don't see any issues with English with the students as they move up to the higher grades. Best to judge for yourself and speak to some of the secondary students. Opinions will vary.
