My girl was studying there and left a year ago. If you don't mind they do not have Chinese lesson, it's a really good school. Teachers were mature and experienced. Kids were very discipline and learning were done thru playing. Every kid got lot of attention and love because of the small size of the school.
At my time, that's no interview at all. As they said, how could you tell about a kid when he/she's smaller than 3. If you apply the school and they have a seat for your, the principal will arrange a meeting with the parent and the kid just for the sake of get to know each other and havea chat. That's it.
It's a great school. My son went there and is now @SJS. It's designed to cope with ESF schools which I think you know already. They don't have text books but the children learn a lot and have no problem when enter ESF P1. Even their classroom layout is similar to ESF's. I don't care if the teachers are certified or not because they are sure "qualified" and well-experienced to teach. You can talk to the principal, Linda, and will get a lot of opinions from her.
If u still want to learn Chinese, suggest your kid to apply "Suen Fong Chung Kindergarten" at the foothill; this school has terrific mandarin teachers from China and can help you to apply "voucher" which makes the school fee only $500/mo. Better than going to private tutoring.

But my friend's girl goes to Clearwater Bay Kindergarten then goes to SFC in the afternoon. I'll see her this weekend and will clarify with her. Will let u know or you can double check.

I phoned SFC and they told me that school started to have pm class this term. They didn't have pm class for the past
year. I know the headmaster of SFC well as I let my daughter to join their Mandarin course for a year when she was a baby (1.5yr).
