Saturday is better as always because most parents prefer to submit on the first day!
If you want to secure late interview, the rule is you must submit near the end on the first day. On the second day, what happen in your case indicates the original planned number of interview room per time slot has been increased, so that interview time for the added rooms will start from 9am again.
There will be some waiting time but shouldn't be as long as 1 hour. I think the smoothest one I have seen was KV's interview.
However, how long it takes would depends on the interview format. The kindergarten would keep changing their interview format and don't expect me to know what SHCK will interview this year!
