Please comment on ESF Wu Kai Sa vs St. Catherine. Which one is with better prospect?

The thing is:

(i) My hubby wants my son to study aboard with good education learning atmosphere

(ii) But I want my son to study at famous school.....

You probably need to sort it out between yourself which path you want to choose for your child. If I were you, I would do St. Catherine.... really don't like ESF WKS all that much.

You can still go to DSS and other IS after St. Catherine!

Decide what kind of education you want for your child first.
St Cat is a traditional local kindergarten. ESF WKS is an ESF kindergarten.
Obviously, you are not only choosing a kindergarten but also a system of education.
Do not know much about St Cat.
For ESF WKS, it is still the best choice if your target primary school is an ESF school.

I heard that ESF WKS is a bit difference from other ESF Kindergartens. Like most of the kids are from Cat 2 (means more chinese) and so as their syllabus.

Over 50 % are Cat 2 is true. Cat 1 parents don't really choose WKS and as of now, they are asking Cat 2 parents from some ESF kindies that are full to transfer their app to WKS because there are still spaces avail.

They are relatively new, so I think it's not so much to do with the curriculum that you need to worry about. They all follow a guildeline under UK early education. It's the teachers and principal's experiences that you should be concern with.
