my son said they usually communicate each other in English during recess. P.S.We are a cantonese - speaking family.

Basically, english first. Even when they meet each other out of school, they will speak in English first as many classmates' English are better than Cartonese.
However, it is not a must behaviour in school. Students are not forced to speak in English. Well, when all lessons except chinese lesson use English, they will speak in English naturally.

我兩個小朋友返到屋企都係用英文鬧交。至於小息，佢地鐘意同同學用咩文都得。

學校旅行同学仔是講英語較多，
不用担心，
相反要多花時間在中文方面，
因小朋友較喜歡看英文書。
